One of the famous dish in iraqi cuisine. It is very delicious and elegant. You make it in special occasions and parties for your families and loved one.
Ingredients:
-Shanks one for each person or as you like. Trim the excess fat as much you can. Wash well and pat dry with paper towel.
-About 2 Tbsp all spice or 7 spices. Available at the Middle Eastern stores.
-Salt and black pepper
-A few cardamom pods
-Two small cinnamon sticks
-2 Bay leafs
1 onion
Dressing:
--------------
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp rosemary
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 cup water
- Salt and pepper to your taste about 1 tsp salt 1/2 tsp pepper
Mix all and set aside.
Steps:
- Wash shanks and get rid of the excess fat as much as you can then pat dry with paper towel.
- In a big fry pan than can be use in the oven or brown the shanks in a pan then transfer to the baking pan.
- Season the shanks from all sides with salt, black pepper, and all spices.
- Brown the shanks over medium heat from all sides.
- Remove the shanks from the pan then add onion, bay leafs, cardamom and cinnamon stick. Fry for just a few minutes.
- Add back the shanks to the pan in case you will use same pan or move the onion and whole spices to the another baking dish.
- Add the dressing all over the shanks.
- Cover the pan well with aluminum foil.
- Roast for 2 hours covered.
- Uncover after 2 hours and base the shanks with the collected liquid in the bottom and roast for another 1 hour. Base every half hour if you like.
- Cooking time depend on the size of the shanks and the oven temperature. But usually will take from 2 1/2 to 3 hours. Check after 2 hours for doneness.
- Usually Iraqi enjoy them with white basamti rice and white bean stew along with herbs and vegetable pickles (Torshi)
