Chicken tamale pie cooked in cast iron πŸ€— Turned out SO good! 

Ingredients:

πŸƒ1.5 cups of cornbread mix, 
πŸƒ1/3 cup of sourcream, 
πŸƒ1/5 cup of oil, 2 Eggs... 
πŸƒMix well and spray the cast iron pan with avocado or coconut oil pour in batter and bake about 20 minutes at 350. 
πŸƒ chop 1 lb chicken breast and cook on the stove in 1 cup of your fave salsa, 
πŸƒ1/4 of a chopped onion and 
πŸƒ1/2 a can of black beans. Cook until done over medium heat (about 20 minutes)
πŸƒ 1 can stewed tomatoes or tomato sauce, pureed then mixed with 2 tsp of chicken bouillon base, 
πŸƒ2 tbsp of cumin, 
πŸƒ1/2 tsp Chile powder 
πŸƒ1/2 tsp black pepper.. 

cook over low heat...

πŸƒ when cornbread base is done poke holes in it the way you would poke cake (I used the end of my wooden spoon) then pour half the enchilada sauce over the top, then the chicken mix then remainder of sauce, top with cheese (optional) and bake about 5 to 10 minutes more. 
πŸƒTop with chopped cilantro and spring onions and serve with sourcream or guac, whatever you n the fam preferπŸ€—
