Ingredients:
- 1 pound chicken breast cubed
- 8oz can pineapple chunks (reserve juice)
- 1 red pepper cubed
- 1 green pepper cubed
- 1 jalapeño minced
- 1/3 cup BBQ sauce
- 3 tablespoons sweet and sour chili sauce - Salt and pepper
- Olive oil
- Wooden skewers
- Cilantro (optional)
Upon seeing a bunch of different kabob recipes in the webisphere, I decided all kabobs really are is just a bunch of stuff you like on a stick soaked in something good. So I crafted these:
Firstly first, like a baking sheet with foil and lay 8-12 wooden skewers (depending on how you stack em) on the sheet and drizzle with olive oil to coat them.
Stack (in no particular order) chicken, peppers, and pineapple. Lay the skewers out on the sheet pan and start making sauce.
Turn broiler on low.
Combine reserved pineapple juice, BBQ sauce, sweet and sour sauce, and chopped jalapeño to a bowl and stir well. Cover skewers in sauce and top everything with a pinch of salt and pepper.
Put skewers in oven under broiler for five minutes. Flip skewers and turn broiler on high. Return to oven and cook for another ten minutes. *** make sure your kabobs are about 10-12 inches from the broiler.
Serve with white rice and garnish with cilantro. Enjoy!!!
