Sweet mandarin pepper chicken going into the oven about to become tonight's #tacotuesday mmmmm
Tutorial and Ingredients:
- 2 organic chicken thighs/legs quarters sprinkled with cumin and black pepper and a pinch of red chili powder
- 7 chopped sweet baby bell peppers
- 1/4 of a red onion chopped
- fresh cilantro (as Lil or as much as you like)
- 3 mandarins or cuties halved and squeezed over the chicken and then tossed in with them
Cover chicken (only about 1/4 of the bird as shown above) and stir in 1 tsp of betterthanbouillon organic chicken base. Cover and bake at 375 for about 50 minutes. Remove from pan at 50 minutes and broil on cookie sheet for another 3 to 5 min. Shred chicken (it'll easily fall off the bone) and set it in a bowl and stir in juices and peppers leftover from baking dish. Enjoy!
