APRICOT & AVOCADO summer salad with SESAME DRESSING.

Serves: 4

FOR SALAD:
5-6 cups Baby Spinach
1 cup Avocado, copped
8 medium size Apricots, chopped
4 long Celerity Stalks, shaved
2 cups Farmer's Cottage Cheese
1 tbsp Sesame Seeds
1 tbsp Dried Tomatoes Spice

Place Baby Spinach leaves on serving plates, lay on Cottage cheese, chopped avocado & apricots, shaved Cerity stalks. Sprinkle with Sesame seeds & dried tomatoes spice.

FOR DRESSING:
1 tbsp Sesame Nut-Butter
1 tbsp Balsamic Vinegar
1 tbsp Rice Vinegar
1 tbsp Honey
1 tbsp Water

Mix all ingredients together until well blended. Season your salad.
