GRILLED ZUCCHINI ROLLS with BLUE CHEESE & RICOTTA CREAM
ZUCCHINI... How many ways to prepare! You know, so low in calories though it may be so TASTY & NOURISHING🍴 . Just choose your favorites TIPS to prepare! Here's my author's ULTIMATE...👨🍳 Soft, rich, mild salted with sweet smack of Cranberry Jelly to be a perfect APPETIZER.. Definitely it WORTH preparing! ENJOY!
- 2 medium-size Zucchini
- 2/3 cup Blue Cheese (Try to choose more soft consistence)
- 1/4 cup Cream
- 4 oz Ricotta Cheese (or Cream Cheese)
- 1 Garlic Clove, minced
- 2 tbsp Cranberry Confiture
- Herbs, Salt, Pepper (Just Create😉)
- Olive oil (to grease Grilling Pan)
Cut Zucchini lengthwise making thin slices. Season with Pepper & Herbs. (I used mix of salt, mustard seeds, dried tomatoes, black pepper, onion, garlic, rosemary, thyme & chili). Soften Blue Cheese, beat on with cream until smooth. Add Ricotta or Cream Cheese to the mixture, add minced Garlic and beat together until well combined. Set aside. Heat your Grill or Grill Pan, carefully grease with Olive Oil, put slices on the Grill surface and cook until getting visible brown stripes. When all sliced are grilled, take one by one and spread cheese mixture, than carefully roll-up them and lay on a serving plate. When finished, make cheese mixture drops on each roll using a teaspoon or pastry bag (the latter makes a better look of appetizers). Accomplish with pickles of Cranberry Confiture. Decorate with Balsamic Glaze.
